Every method below skips the stone. How do you know your knife is actually dull?
A dull knife stops splitting food and starts pushing it. The clearest signs: a ripe tomato squashes instead of slicing, an onion skin resists the blade so you end up sawing, and a sheet of paper tears rather than parting cleanly when you draw the edge through it. - The onion test. If the tip has to be forced through the papery outer skin, or the knife slides sideways off a round onion, the edge has rounded over.

Why does the sharpening angle matter so much?
The angle is the whole job. Sharpening at one repeatable angle grinds a controlled, even bevel that meets at a clean apex. What is the easiest way to sharpen kitchen knives at home?

Do rolling sharpeners actually work, or is it a gimmick?
The mechanism is real and the skepticism is fair. Which knives should not go on a rolling sharpener?
Three categories, worth knowing before you buy rather than after. A rolling sharpener with a magnetic angle block is built for straight-edged, double-bevel steel knives — chef's knives, santokus, paring knives, utility knives, most of what is in a home kitchen. Outside that, the geometry stops matching.
- Serrated blades. A flat rotating disc bridges across the scallops of a serration and only touches the high points. It cannot reach into the grooves, which is where a serrated edge lives. Bread knives need a different tool entirely.
- Ceramic blades. Ceramic is not magnetic, so the angle block cannot hold it. The core mechanism simply does not engage, and ceramic-blade makers direct owners to their own dedicated equipment or factory resharpening.
- Single-bevel traditional Japanese knives — yanagiba, deba, usuba. These are ground asymmetrically: flat on one side, beveled on the other, often below 15 degrees. A symmetric block that assumes equal angle and pressure on both sides is the wrong geometry for them, and no amount of careful technique fixes a geometry mismatch. Double-bevel Japanese-style knives — the santokus and gyutos most home cooks actually own — are a different case and generally fine at the 15-degree face.
How does a rolling sharpener compare to what you already own?
